Analysis of the processes and productivity: case study in muffins production

This work was carried out with the objective of analyzing the methods used to make muffins and thus optimizing the efficient use of resources and establishing performance standards, based on the study of the work. Another objective is to study the production of the product, in this case three different flavors such as chocolate chips, cinnamon banana and blackberry, as shown in the first phase of the article when analyzing the behavior of demand along with the structure of the product, your technical data sheet and production process. In the second phase, he carried out an analysis of the time required by each process analyzing the proper productivity of each, to identify the main problems in the production of muffins. Once analyzed costs in relation to processes and inputs are proposed improvement actions to improve the productivity of the organization optimizing times, avoiding by-product of raw material to reduce costs in each process that leads to the production of these. This study was carried out based on the collection of data based on experience and observation focusing on a study methodology such as Pareto diagrams which analyze the different products to improve their quality; another reference tool is operational process and process flow diagrams that represent chronological sequences of each of the operations, inspections, allowable times and delays; all of the above in order to propose a continuous improvement that increases demand and optimizes productivity.
